Description
In this live and real-time culinary experience, you will learn to cook from amongst a range of traditional Thai, Indian, Arabic & continental dishes. The main focus of this session will be on utilizing herbs and spices and how it develops the flavours in each cuisine. The cuisine and dish can be established according to the wishes of the client.
We can also cook anything from the list below in a separate session:
Fusion cooking
- Option 1: Flavored rice/pasta with Stroganoff (beef/chicken)
- Option 2: Spiced Tuna Aux Riz
Traditional cooking:
- Option 3: Malabar chicken curry/ Palak paneer(veg)
- Option 4: Traditional Kerala dish infused with banana leaves.
- Option 5: Traditional Thai Green curry- chicken/veg /seafood.

Know before you go
Please arrange the following ingredients prior to the beginning of the experience for this week:
Malabar Dum Biryani (Veg/Non-veg) - 150 years old traditional recipe
- Chicken – 450gms
- Salt - to taste
- Lemon juice
- 3 tablespoons of turmeric powder
- 4 tablespoons of red chilli powder
- 4 tablespoons oil - as required ( 10 tablespoons )
- Onion - 300gms ( including garnish )
- Ginger garlic paste - 4 tablespoons
- Green chilli - 4 nos
- Tomato - 3 nos
- Yoghurt - 1/2 cup
- Mint leaves - 25 leaves
- Coriander leaves - a small bunch
- Garam masala - 4 tbsp
- Coconut milk - 1/2 can
- Eggs - 2 nos
- Black pepper cons - 1 tbsp
- Curry leaves -a small bunch
- Basmati rice - 350gms ( serve 3 to 4 people )
- Rosewater - 50 ml
- Ghee/butter - 100ml
- Cashew nuts - 50gms
- Raisins- 50gms
- Saffron - 3 stripes
- Aluminium foil - as required
- Pineapple cubes - 15 cubes
- Cardamom - 6 nos
- Biriyani masala- 3tbsp ( if you can't find it, collect fennel seeds, poppy seeds, cinnamon, cloves, star anise )
