Ingredients

CHICKEN KAPITAN

  • 500g boneless chicken
  • 2 pcs of lemongrass (approx 4 inches) - bruised
  • 4-5 kaffir lime leaf
  • 1 tbsp lime juice
  • 100 ml of coconut milk
  • 1-inch Galangal (thinly peeled and sliced)
  • 1-inch ginger (peeled and sliced)
  • 1/2-inch fresh turmeric (peeled and sliced)
  • 6 pcs fresh red chillies (seeded and sliced)
  • 5 pcs candlenut
  • 5 pcs shallots
  • 1/2 inch scrimp paste (Belacan)*


SAMBAL BELACAN

  • 4 pcs fresh chillies (with seeds)
  • 2 pcs shallots
  • 1 inch scrimp paste (Belacan)*
  • 1/2 Calamansi lime
  • Salt (to taste)

*Scrimp paste is available in the shape of a disc, block or granules
