Join me on this live-streamed Online Experience and try your hand at making Charquican de Cochayuyo, an authentic preparation that combines the intangible heritage of Chilean and Spanish cuisine. 

Dating back to the 14th century, this dish reflects our authentic culture and spirit of our native ancestors as the Mapuche, Aymara and Quechua, reflecting the essence of a historical period of our foundation as a nation. You will find it quite easy to make this seaweed preparation over an interactive session with me, as I chat with you about a wide range of topics ranging from our culture to even healthy eating habits! While this dish uses traditional ingredients, we can also improvise to utilise items readily available all over the world.

Please arrange the following ingredients and equipment before joining this experience:

  • Pumpkin - 250 gm
  • Potato - 500 gm
  • Garlic
  • Cochayuyo (Brown seaweed) - 1 cup
  • Carrot - 1 
  • Corn 
  • Fresh green beans - 1/2 a cup 
  • Cilantro
  • Paprika
  • Orégano
  • Salt
  • 1 laurel leaf
  • Cilantro seeds and 
  • Red hot chilli pepper

I am a senior tour guide and a professor at the School of Tourism. I moved from Patagonia to Santiago de Chile in 2004 and have been living here ever since. In my experience, I have had the opportunity to travel around Chile, from north to south seeing the coastline and the mountains. I have been to several wineries and guided groups through the most important vineyards of the country. I have learnt a lot about the culinary traditions of Chile. I am passionate about cooking and pairing different types of Chilean wine with the traditional national cuisine. I would like to share the secrets of local Chilean cuisine with you.
