Thanks to Caterina, my one day trip to Modena was a great experience, and one day value even more after some mixed experiences on this trip.  She led a wonderful culinary tour of the market and fostered a nice community within the group.  If you go, make sure you are hungry and get extra of the Ricotta cheese, which is the best I ever had.  I enjoyed my "leftovers" later that night.  The tour culminates with the a wonderful Balsamic tasting and Caterina studied 8 years to be a master taster.  She has a great rapport with the shop.  And, very importantly, she gave me a great recommendation for a memorable dinner that night.  As an American I would never thought to have tortellini with beef broth.  In the tour she said that is a traditional way to have it.  I will seek this preparation for the rest of my life.  So good! After I ordered that the waiter guided me through a more expertly advised meal.  Just the Italian culinary experience I had wanted!  Thank you. Grazie  mille!!
