Through this online live experience,  I will bring you some of the most popular & flavoursome Goan dishes – Mushroom Cafreal along with Cabbage Fugath. I will also take you through the culinary journey of Goa and how the rich past has shaped Goan Cuisine. Ingredients & Equipment list for Mushroom Cafreal - Serves: 4


INGREDIENTS

  • 4 cups chopped mushrooms
  • 1/2 teaspoon turmeric powder
  • 6 cloves
  • 1/4 teaspoon poppy seeds
  • 1/2 teaspoon cumin seeds
  • 2 green chilies
  • 1/2-inch piece of cinnamon
  • 5-6 garlic cloves
  • 2 cups (100 gr) cilantro leaves
  • A handful of mint leaves (optional, it adds aroma and flavor)
  • 10 peppercorns
  • 1/4-inch piece of ginger
  • 1 tablespoon sugar
  • 3 tablespoons lemon or lime juice
  • 2 tablespoons Worchester sauce
  • 1 medium onion, finely chopped
  • 2/3 cup (150 ml) chicken/vegetable stock or water
  • 4 tablespoon vegetable oil
  • Salt to taste


EQUIPMENT LIST

  • Bowl with Mushrooms for marinating
  • One Plate to keep the spices before grinding
  • Mixer grinder to grind the masala
  • Shallow pan to cook the cafreal
  • A couple of spoons (4tbsp + 6 tsp)
  • Wooden spatula 1, rubber spatula 1
  • Gas stove or induction for cooking
  • One plate, 1 bowl, chopping board, and knife. This will be stand by.
  • Jug with 1 Ltr room temperature water.


Ingredients & Equipment list for Cabbage Fugath - Serves: 4

INGREDIENTS

  • 200 Grams of Cabbage
  • 1 tbsp Chickpea lentil
  • 1 tsp Mustard Seeds
  • 1 Green chili
  • ½ tsp Black pepper powder
  • 8 Curry Leaves (Optional)
  • ½ tsp Sugar
  • A pinch of Asafoetida (Optional)
  • 2 tbsp grated coconut
  • 2 tbsp oil
  • Salt to taste


EQUIPMENT LIST

  • A bowl to keep the chopped cabbage
  • A plate to keep chopped green chili, curry leaves, Mustard seeds, Black pepper powder, Grated coconut, asafoetida, sugar, salt
  • Small bowl to soak the lentils
  • A deep pan for cooking
  • 1 wooden spatula
  • Gas Stove or Induction for cooking
  • A plate, a bowl, a Chopping board, and a knife. This will be used in case needed.

I have worked as a Customs officer for several years before I voluntarily retired to convert my passion for cooking into a full-time profession. I have been extending culinary experiences to travelers from across the globe for the last ten years. Curries, Masalas, Chutneys, and several Goan dishes are part of my cooking classes. I have learned cooking skills from my family and have attended several cooking courses.
